Dialing in my calorie deficit

I need some help dialing in my calorie deficit. I'm male, 31, 5'11, 275 pounds. I've been bigger my whole life but really want to lose it. I stopped drinking about 3 weeks and was a daily drinker. Not heavy, but not healthy. I've gone months before without it.

I drink about 3-4 cups of coffee a day and at least 2 litres of water. I eat about 180g of carbs a day, 100g of fat, and 130 grams of protein.

My TDEE is about 2650 and my BRM is 2200 (from the tdee site, not perfect but better than nothing). I've been restricting to between 1700-2100. No more, no less, typically.

I've been getting slight headaches lately, usually starting around 2-3 and lasting through the evening, even after I've eaten dinner.

Im wondering if this my body getting used to my new food intake (if I were to guess, I'd say I was consuming around 4000 a day prior, maybe less, maybe more), caffeine withdrawal because I stop drinking coffee after around 12pm (and I used to have a coffee in the afternoon), or a symptom of low blood sugar?

Also, am I eating too little for my stats? While I want to lose, I also want to lose safely and effectively.
